Theres usually two different schools of thought with this issue that i've come across. Some pepole like to sit down in a cash game as the short stack, some people like to sit in for the maximum. I'm one of the people who likes to sit in for the maximum, I like to have everyone covered so i can earn the maximum for my hands and for cover in case I take some hits early on etc. Its just the style I like to adopt, others have plenty of good arguments for the short stack too.
Also depends on if you're talking No Limit or Limit.
biohazard's answer is regarding NL, but I'd say most would advice you to sit down with the maximum considering you never know when you flop the nuts against the second nuts.
When talking limit, it is commonly regarded that you should never have less than an amount equal to capping every street, i.e. 12 BB(unless you play at a site with no cap when HU, where you should probably sit down with a lot more). Other than that, regarding to limit is down to taste, I always prefer to sit down with 40 BB and rebuy in case I drow below 15 BB

No limit the max that you can if there is a option unless you want to play the short stack game.
Limit I often see players end up all in with a monster and leave money on the table. In LHE there is no reason to be short stacked.
In limit, I always sit down with 30BB, rebuy 10BB if it drops below 20BB. I hate to sit down with 20BB and be forced to rebuy after losing the first few hands (which happens regularly). I have one exception: If I am starting a new table, I always sit down with the 'standard' buy-in. (I don't want to scare away the fish ).
