Does he have AJ or can I cap the flop and lead?

I would bet the turn here, call down if he raises there again. AJ is certainly possible, but so is KK and QQ. With two aces and two jacks out, he can only have four AJ combo's (and one JJ combo). While he has six KK and six QQ combo's. So you are behind to 5 combo's, while ahead of 12 combo's.

The reason to slow down after he raises the turn is that your hand is face up, and he still raises. Unless he is an idiot, he will have AA too at the very least.

If he's going to keep firing with all 17 combos, and raise the ones that beat us or split, surely it's better just to check and call down, isn't it?

I would check/call the turn and bet/call the river.
